Breakfast this Morning- Cinnamon Muffins- Easy!!

My boys helped me out this morning making Cinnamon Muffins from Tastefully Simple.  Specifically it is the Cinnamon Muffin Melt Mix.  They are so easy to make-  you only need water and a stick of butter.  You add water to the mix then cook the batter.  Then you dip the muffins in a stick of melted butter and then the cinnamon sugar mixture.  The boys figured out that you can double dip to get extra cinnamon on top.  So easy, a five year old could do it- minus putting the batter in the oven :)

What's for Dinner tonight? Cheesy Chive Chicken Kiev

I'm a consultant for Tastefully Simple, so I try to use their ingredients whenever I can.  Tonight we're going to have Cheesy Chive Chicken Kiev, a recipe from the Tastefully Simple Website.

Cheesy Chive Chicken Kiev

1 packet Cheesy Chive Warm Dip Mix 

8 oz. cream cheese, softened
4-6 boneless, skinless chicken breasts, pounded flat
1 egg
1 cup milk
1 cup breadcrumbs

In a small bowl, combine Cheesy Chive Warm Dip Mix with cream cheese. Spread the cheese mixture on one side of the chicken breast and roll it up. In a bowl, whisk the egg and milk. Dip each rolled chicken breast in the egg mixture then roll into the breadcrumbs. Place seam-side down on a greased baking sheet. Bake at 350° for 40 minutes. Makes 4-6 servings.

This will be my second time making this, the first time I used regular chicken and pounded it flat, but for tonight I'll just use the thin chicken breasts.  So yummy! 

Also, after I sent this recipe to friends, one of my bff's suggested that you could replace the breadcrumbs with oatmeal for a healthier and crunchier alternative!

Keeping it Real- my closet- brace yourself!

I share my closet with my husband- he has the left side and I have the right.  He mentioned today that our closet is getting a little out of control- isn't that an understatement.  I've recently started reading some minimalist family blogs such as The Minimalist Mom and while I am no where even close to that point, they are awesome motivators to get rid of some of my crap so that I can focus on things that are more important to me- like family and friends.  So this will be my first step towards going Minimalish :)

Like La-Z-Boy and donate a bear to Ronald McDonald House

La-Z-Boy has a great promotion going on right now! If you like La-Z-Boy on their Facebook page, then you are able to type in your zip code and they will donate a Comfort Bear to your local Ronald McDonald House.

I was able to donate a Comfort Bear to our Ronald McDonald House in Wilmington. When I was in college I volunteered there once by preparing breakfast for the families who were staying there along with 3 other girls who were living in my dorm community. It was such a small act, but the families who were going through the difficulties of having a sick child were so appreciative! The Wilmington Ronald McDonald House is a beautiful place with themed rooms that tries to make the families feel as at home as possible while their children are undergoing treatments, often at A.I.DuPont Hospital. This is a great way to easily support this great organization!

Groundhog's Day

Hi everyone,

I hope everyone had a great Groundhog's day! As you probably have heard, according to my fave groundhog up in Philly, spring will be coming early this year. Thank goodness because I am in the Northeast and I am so tired of this snow. So far my 5 year old has had off 2 days this week due to icy roads. He even missed Tuesday, which is his favorite day because I let him stay for lunch :). Spring- can't wait to see you!

Trying it Again!

So I love reading blogs!  I don't know how many blogs I have saved in my google reader, but often one of my goals is to get the number of posts under All items to be under 1000 and this is often not easy to do!  This is because I have many different blogs that I love to read- frugal mom blogs that are always updating us with awesome coupons, inexpensive style blogs that show us awesome looks on the cheap, direct selling blogs that give us tips (because I do 2 direct sales companies), mom blogs in general, makeup blogs, home decorating- especially frugal home decorating- I love it all! 

This is now my second or third blog that I have tried starting up, I just never kept up with the other ones.  I think the problem with my previous blogs is that one of the reasons I started was to promote my businesses and also that I tried to focus on one aspect of my life.  So this blog will be different, I'm just going to write about anything I feel like.  Wish me luck!
